A creamy, spicy Cajun Potato Soup made with andouille sausage, tender potatoes, fresh vegetables, and bold Cajun spices. Finished with heavy cream and cheddar cheese for a rich and comforting meal.
1 tablespoon vegetable oil
1 ring (13.5 ounces) andouille sausage, sliced into 1/4-inch rounds
1 large onion, diced
1/2 cup diced celery
1/2 red bell pepper, seeded and diced
2 teaspoons garlic, minced
1 teaspoon Cajun seasoning
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
4 cups chicken broth
4 large russet potatoes, peeled and cubed
1/2 cup heavy whipping cream
1 cup mild cheddar cheese, shredded
Chopped parsley for garnish
1. Heat oil in a large pot over medium heat. Add andouille sausage and cook until browned. Remove sausage and set aside.
2. Add onion, celery, and bell pepper to the pot. Cook until softened.
3. Add garlic and cook for one more minute.
4. Add Cajun seasoning, salt, pepper, paprika, cayenne, chicken broth, and potatoes. Stir well.
5. Reduce heat and simmer 20–25 minutes until potatoes are tender.
6. Return sausage to the pot. Add heavy cream and cheddar cheese.
7. Simmer 5 minutes until heated through and cheese is melted.
8. Garnish with parsley and serve warm.
Adjust cayenne pepper to your heat preference.
Serve with crusty bread for a complete meal.
