A creamy, spicy, and flavorful Slow Cooker Cajun Chicken Pasta made with tender chicken, vibrant peppers, Cajun spices, and perfectly cooked pasta for an easy weeknight dinner.

1 pound boneless skinless chicken breasts, cut into 1-inch pieces

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1/2 yellow onion, thinly sliced

4 cloves garlic, chopped

3/4 cup coconut milk

1/2 cup low sodium chicken broth

1 can crushed tomatoes (14.5 ounces)

1 tablespoon Cajun seasoning

2 teaspoons smoked paprika

1 teaspoon kosher salt

8 ounces uncooked penne pasta

1 cup freshly grated parmesan cheese

Chopped parsley for garnish

Instructions

1. Add the chicken, bell peppers, onion, tomatoes, and garlic to a 6–9 quart slow cooker.

2. Combine coconut milk, chicken broth, crushed tomatoes, Cajun seasoning, smoked paprika, and salt in a bowl.

3. Whisk the mixture until smooth and pour it over the chicken and vegetables.

4. Stir everything well, then cover and cook on high for 1 1/2 hours.

5. Remove the lid and stir in the uncooked penne pasta, ensuring the noodles are coated in liquid.

6. Cover and cook for 30–40 minutes, stirring occasionally, until the pasta is al dente.

7. Add parmesan cheese and stir until fully melted into the sauce.

8. Keep warm until serving and garnish with parsley and extra parmesan.

Notes

Serve immediately to avoid mushy pasta.

If cooking on low, switch to high before adding pasta.

Pasta cooking time may vary depending on slow cooker model.

Freezing is not recommended because the pasta becomes mushy.
