3 cups cooked shredded or chopped chicken breast

6 cups low-sodium chicken stock

8 oz thin spaghetti or angel hair pasta, uncooked

1 can (10.5 oz) condensed cream of chicken soup

2 medium carrots, sliced

1/2 cup chopped celery

12 slices thick-cut bacon, cooked and crumbled

1 1/2 cups shredded mild cheddar cheese

1 packet (1 oz) Ranch dressing mix

1 cup whole milk

3/4 cup cream cheese, softened

Instructions

1. Cook bacon in a skillet until crispy, then set aside.

2. Combine chicken, carrots, celery, cream of chicken soup, chicken stock, milk, cream cheese, ranch mix, and bacon in a large pot.

3. Bring to a boil while stirring occasionally, then reduce heat and simmer for 20-25 minutes.

4. Add pasta and shredded cheddar cheese, simmer until pasta is cooked.

5. Garnish with freshly chopped parsley and serve with bread.

Notes

Use rotisserie chicken for convenience.

Adjust milk and cream cheese for desired creaminess.

Do not overcook pasta to avoid mushy texture.
