Tender slow-cooked chicken coated in a rich bourbon ginger sauce for a flavorful and comforting meal.
3 pounds boneless skinless chicken thighs
3 tablespoons cornstarch
1/4 cup sliced green onions
1/2 teaspoon grated fresh ginger
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1/3 cup apple juice
1 1/2 tablespoons honey
1/4 cup brown sugar
1/4 cup ketchup
3 tablespoons apple cider vinegar
1/4 cup water
1/4 cup bourbon
1/4 cup soy sauce
Salt and pepper to taste
1. Mix all sauce ingredients in a bowl.
2. Place chicken in the slow cooker and pour sauce over it.
3. Cover and cook on low for 6 to 7 hours or high for 3 hours.
4. Remove chicken and chop into small pieces.
5. Combine water and cornstarch to create a slurry.
6. Turn slow cooker to high and whisk the slurry into the sauce.
7. Let the sauce thicken for about 10 minutes.
8. Stir chicken back into the thickened sauce.
9. Add sliced green onions and stir to combine.
10. Serve warm over rice.
Use regular soy sauce for the best flavor.
You may thicken the sauce on the stove if preferred.
