A tender and juicy pork loin slow-cooked in a sweet and savory pineapple sauce. Perfect for weeknights or family gatherings, this dish pairs beautifully with rice or roasted vegetables.
1 tsp onion powder
1 tsp smoked paprika
1 tsp ground black pepper
1 tsp salt
2 tbsp vegetable oil
2–3 lb pork loin roast (boneless or bone-in)
8 cloves garlic, minced
1/4 cup soy sauce
1/2 cup light brown sugar
1 can pineapple chunks (20 oz), with juice
1. Combine onion powder, smoked paprika, salt, and pepper in a bowl. Rub mixture evenly over pork loin.
2. Heat oil in a skillet over medium-high heat. Sear pork for 1–2 minutes per side until golden.
3. Transfer pork to slow cooker and sprinkle minced garlic on top.
4. Add soy sauce and pineapple chunks with juice. Sprinkle brown sugar evenly.
5. Cover and cook on LOW for 4–6 hours until tender.
6. Remove pork, slice or shred, and serve with rice or roasted vegetables. Spoon pineapple sauce over top.
Add red pepper flakes or sriracha for a spicy kick.
