Jalapeno Chicken features tender, pan-fried chicken thighs tossed with onions and jalapeno peppers in a sweet, salty, and slightly spicy sauce.
2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
1/4 cup cornstarch
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/3 cup soy sauce
1/3 cup water
1/3 cup light brown sugar, packed
1 teaspoon sesame oil
2 teaspoons minced garlic
1/2 yellow onion, diced
2 large jalapeno peppers, thinly sliced
Sesame seeds, for garnish
Cooked white rice, for serving
1. Combine chicken, cornstarch, salt, and pepper in a bowl.
2. Mix soy sauce, water, brown sugar, sesame oil, and garlic in a separate bowl.
3. Heat oil in a skillet over medium-high heat.
4. Add chicken and cook for 2-3 minutes per side until browned and cooked through.
5. Transfer chicken to a plate and keep warm.
6. Add onions and jalapenos to the skillet and cook for 4-6 minutes until softened.
7. Return chicken to the skillet and pour the soy sauce mixture over it.
8. Stir and cook for 2-3 minutes until heated through.
9. Serve over white rice and garnish with sesame seeds.
For air fryer chicken, cook at 400°F for 10 minutes, flipping halfway.
