½ cup sun-dried tomatoes (julienne-cut, drained)

1 tablespoon oil from sun-dried tomato jar

1½ cups yellow onion, chopped

4 garlic cloves, minced

3 tablespoons tomato paste

2 (32-ounce) cartons chicken broth

1 cup heavy whipping cream

4 teaspoons fresh basil, chopped

2 teaspoons kosher salt

1½ teaspoons Italian seasoning

1 teaspoon garlic powder

¼ teaspoon crushed red pepper flakes

8 ounces medium shell pasta, uncooked

3 cups baby spinach, roughly chopped

2 cups rotisserie chicken, shredded

8 ounces cream cheese, cubed and softened

1½ ounces Parmesan cheese, finely shredded

Instructions

1. Heat the sun-dried tomato oil in a large Dutch oven over medium heat.

2. Add onion and garlic and cook until softened and fragrant.

3. Stir in tomato paste and sun-dried tomatoes and cook until deepened in color.

4. Add chicken broth, cream, basil, salt, Italian seasoning, garlic powder, and red pepper flakes. Bring to a gentle boil.

5. Add pasta, reduce heat, and cook until pasta is al dente.

6. Lower heat and stir in spinach, chicken, cream cheese, and Parmesan until smooth and creamy.

7. Taste and adjust seasoning if needed.

8. Serve hot, garnished with extra Parmesan and basil.

Notes

For best texture, bring cream cheese to room temperature before adding.

Use freshly grated Parmesan for the smoothest melt.

If soup thickens on standing, add a splash of chicken broth when reheating.
