This recipe delivers soft or jammy eggs swimming in a rich seafood boil-style sauce packed with garlic, Old Bay, and lemon.
It’s quick, customizable, and perfect as a high-protein snack or light meal.
For the Eggs:
6 large eggs (room temperature for even cooking)
Ice (for ice bath)
For the Egg Boil Sauce:
4 tablespoons unsalted butter
3 cloves garlic, minced
1 tablespoon Old Bay seasoning (or Cajun seasoning)
1 teaspoon lemon pepper
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon cayenne pepper (adjust for spice: mild, medium, hot)
¼ teaspoon crushed red pepper flakes
1 teaspoon brown sugar (omit for keto)
1 cup chicken or vegetable broth (low-sodium)
Juice of 1 lemon (about 2 tablespoons)
Salt and black pepper, to taste
Optional: ¼ cup diced onion, 1 bay leaf, fresh parsley or green onions for garnish
1. Fill a medium pot with water and bring to a rolling boil over high heat.
2. Gently lower room-temperature eggs into boiling water using a spoon to avoid cracking.
3. Set timer based on yolk preference, then transfer eggs immediately to ice bath.
4. Ice bath eggs 2-3 minutes, then peel under cool running water.
5. In large skillet, melt butter over medium-low heat.
6. Add diced onion (if using) and sauté 2-3 minutes until softened.
7. Stir in garlic and red pepper flakes; cook 30 seconds until fragrant.
8. Add all dry seasonings (Old Bay, lemon pepper, paprika, powders, cayenne, sugar, bay leaf). Stir 1 minute.
9. Pour in broth and lemon juice. Simmer 5-7 minutes until reduced.
10. Taste and adjust seasoning.
11. Add peeled eggs to sauce. Spoon sauce over eggs and simmer 2 minutes. Remove bay leaf.
